This week, Vine Talk visits one of the world’s most popular wine regions, Tuscany, to sample Chiantis — the red Italian wines the region is known for.  Joining host Stanley Tucci on the tasting panel are Stephen J. Dubner, Tommy Tune, and Gail Simmons.

    I recently viewed this episode of vine talk and would like to correct some misinformation from one of your commentators about tannins. Tannins are not amino acids as indicated by your commentator. They are a complex group of polyphenolic compiunds which act as antioxidants. The tannins and other similar compounds are what gives red wine some of the health benefits that have been discovered in recent years. They also protect red wine during aging. As antioxidants they prevent other components from oxidizing by being oxidized themselves. In doing so the wine loses the astrigent bite, but still maintains it fruitiness. Red wines that are ageworthy usually have a solid tannic backbone. I hope this helps.
